Week 5 Question

Two favorite soup recipes. Ready? Go!

  1. Taco Soup is one of my favorites and part of that is that it is so easy.
    1/2 lb. to 1 lb. cooked hamburger ( I like to cook up 5 to 10 pounds at a time and bag and freeze it for this soup.
    1 can kidney beans ( washed and drained)
    1 can corn
    1 can diced tomatoes
    1 8 oz. can tomato sauce
    Mix together and simmer for 20 minutes to 1/2 hour.

    Potato Soup
    Peel and dice three or four large potatoes
    Cook until almost tender in an inch or two of water
    Saute one onion and two to three stalks of diced celery in butter until almost tender. Add to potatoes along with one to two cups diced ham.. Add two cups milk or half and half and thicken with two tablespoons flour mixed with 1/2 cup milk. Bring to a boil and then simmer for 45 minutes to one hour.

  2. Week 5 Menu
    Sunday - roast beef and cheesy potatoes compliments of Jeff and Ikumi and their ward party that was catered by Elements.
    Monday - taco soup
    Tuesday -grilled chicken breast and baked potatoes
    Wednesday - Spaghetti and bread sticks (Alissa's b-day)
    Thursday - mock lasagna
    Friday & Saturday - pick up dinner before the USU BB games

  3. I had forgotten about that potato soup, Mom! Thanks for the reminder. And what is mock lasagna? I feel like I should know what that is...

  4. I agree with Mom Taco Soup is a favorite of mine. I also love this White Chili.

    White Chicken Chili

    6can great northern beans
    4c chicken broth
    simmer 15 minutes

    4c diced chicken
    1/4t cayenne pepper
    2 cans diced green chilis
    1/2t white pepper ( I use black)
    1 1/2t chopped garlic
    2 small onions, chopped (I only use one)
    2t cumin
    24 oz sour cream
    1 1/2t oregano
    2t salt

    add ingredients and simmer 2 hours (I usually just put it in my crockpot for about 3-4 hours)
